Everyone in my household was feeling rather peckish and they were craving for a quick simple lunch, of course I was there to their rescuer, I knew exactly want could satisfy their little tummies. I decided to bring out my Italian side as I love Italian food and my name is even a little bit Italian...well I think (Claudia)so I was in a inspirational mood. I decided to make bruschetta as the process is dead simple even though it takes a degree of delicacy. All that is involved is simply cutting your ingredients, mixing them together in the bowl as well as adding pinch of salt and black pepper, this is then followed by lightly toasting the bread and evenly pouring the contents over the bread, finish off with drips of olive oil.
